Source: Dalchini is harvested from the inner bark of several evergreen tree species within the Cinnamomum genus. The bark is stripped, and as it dries, it curls into rolls called quills (sticks).
Aroma & Flavor: It is well-known for its warm, sweet, and rich aroma. The flavor is similarly warm, sweet, and slightly pungent, with subtle citrus or floral notes in the “true” variety.
Appearance: As whole sticks, dalchini is typically reddish or yellowish-brown. As a powder, it is a fine brown powder.
Key Compound: The distinctive aroma and flavor primarily come from an essential oil whose main component is cinnamaldehyde.
