Description
Appearance Til Barfi typically comes in the form of dense, square or diamond-shaped pieces. Its color ranges from off-white to golden brown, depending on whether white or black sesame seeds are used and if milk solids (khoya/mawa) or jaggery are the primary binders. It is often garnished with chopped nuts like pistachios or almonds, and sometimes edible silver leaf (vark).
Texture The texture can vary from soft, chewy, and melt-in-your-mouth to a firmer, sometimes brittle, fudge-like consistency, depending on the specific recipe and cooking method. The coarsely ground sesame seeds provide a characteristic nutty crunch.
Flavor It has a distinctive, rich, and nutty flavor from the toasted sesame seeds, complemented by the earthy sweetness of jaggery or a creamy undertone if made with milk solids. It is commonly flavored with fragrant additions such as green cardamom powder.
